Another option might be thin birch plywood; that appears to be what the
interior specialists use on some of the cable reality shows.  My son used
Masonite (at my suggestion) several years ago on the door panels of his car,
and over time they warped pretty badly, buckling between the fasteners.
Apparently they had absorbed moisture while in storage.

Masonite or thin birch/luan panels, or "door skins". You must paint any panels or they will eventually warp from drawing moisture. Just a coat or two of polyurethane to seal them will be fine. I also use a plastic sheet inside like the factory did. Older cars used a tar coated paper water shield, I replace that with plastic -- a garbage bag work fine! Heck, I've even used roofing "tar paper"!
